Neither, I’d take a plane.
If I had to, probably the Ecoboost. Less money wasted on gas traveling on a boring road. If you’re looking to do some top speed runs, though, the GT is the better choice.

GT replaced the ecoboost.
The GT is more fun day to day. It makes more satisfying noises and when you’re really on it it’s definitely faster. Interestingly at lower speeds the EB feels quicker. Mine was tuned, so this doesn’t apply to a stock EB, but the torqure from the turbo down low gives a better shove from a stop than the 5.0. The power delivery is almost inverted between the two: from 2500-4000 rpm the EB gets a healthy amount of torque with a big shove at 3500 rpm, then trails off as you approach the redline. The GT, on the other hand, doesn’t really get going until 3500-4000 RPM and from there it builds all the way to redline.
The most noticeable difference is getting off throttle and back on around 4000 RPM. In the EB there’s a bit of spool and a thrust towards torque, but in the GT there’s just a punch in the face of torque.

I would get about 23 average in the EB, I have been getting 16-17 in the GT. So it sucks, but the EB had to use premium (it was tuned) while the GT takes regular. With the difference in price between regular and premium the GT doesn’t really cost much more to run, but I’m at gas stations more often.

Surprisingly bad. I’m 28, I haven’t had any accidents, and when I quoted the same coverage on the GT it went up something like $40-$50 more a month. Fortunately I felt comfortable increasing my deductibles to $1000 which brought the cost to about the same.
I plan to do a defensive driving course to get an additional discount so I can roll back the deductibles again.

The GT would be more effective. The larger splitter on the front would make it easier to score higher point totals.

I don’t know yet. At some point soon I need to drive the EB again to really know, but right now I would say “it depends”.
For normal day to day driving, that boring puttering around? The EB is a little more fun. The GT just doesn’t make a lot of torque or power down low, while the EB spools up pretty quickly and feels good. For hooning? The GT for sure. Once the engine spins up and you’re in the power it’s comically responsive. I’ve had a lot of fun taking friends for rides and catching up to traffic only to create some space before flooring it from 4000 RPM and getting thrown back to the headrest by the torque.

Have you autocrossed the GT yet and if so, how does it compare to the EB on the course? Does it feel “heavier” or less agile around corners? Do you have anything you’d like to improve or are you satisfied with how it is?

This is everyone’s first question and it’s not easy to answer if I’m honest.
Objectively they’re both fantastic cars. And at their core the things that make them fantastic are shared - the styling, the interior, the handling. The part that differentiates them, the engine, doesn’t immediately stand out as one being better than the other. They’re just...different. A tuned EB is almost as fast as a stock GT. In some situations the EB is more fun to drive than the GT while in others the GT is significantly more exciting.
At the end of the day I feel happier in the GT. It feels right, I don’t sit and question whether I bought the right car. I never really questioned the EB, I liked it a lot and I picked it for all the right reasons, but everyone else did. Everywhere you look people are dumping on the ecoboost, at every stop light people would ask if it was a V8 and then wipe their smile when I said it was a 4 cylinder, every Top Gear review would say “the EB is good but the GT is better”.
That last one sticks out the most. For as good as the EB is, the GT is better. While the EB is a great car, the GT is world class. Why? It just puts together a complete package. There’s nothing to question about it, nothing to justify. It’s easier to enjoy and boy is it enjoyable.

This sunday will be my first autox in it, I will report back. On the street it doesn’t feel heavier. My EB was not a performance pack while my GT is, and I can notice the stiffer suspension because the GT doesn’t seem to have as much body roll, and going from the little base 2 piston brakes to the enormous GTPP 6 piston brembos is a bit shocking.
I need to improve the exhaust for sure, the stock exhaust is way too quiet. I think a better rear sway bar will go a long way, even for the EB I should have upgraded it because the car is big and heavy so it doesn’t really like to rotate that well.

Does the suspension crash over bumps more, or is it still comfortable? Do you feel like the stiffer springs keep the car more planted when accelerating?
How do 6 piston brembos perform? My brain has no concept of what that would be like. Do they grab like normal brakes and get progressively more mind-blowing?

It’s not crashy, the suspension is pretty comfortable. Roads that are more “wavy” are a bit annoying, it just bounces.
The brakes are pretty ridiculous. The car is still heavy and I’ve noticed that the tires I’m currently on don’t have the best braking performance or at least can’t really keep up. Initial bite is absurd, it actually makes heel-toeing hard at lower speeds because I can’t press the brake enough to reach the gas pedal without getting tossed forward.
